But until last Sunday, the one thing my kitchen lacked was a waffle maker.

Since acquiring a waffle maker I have been imagining all sorts of ways to use it other than for simple, traditional waffles. Although I may possess an excess of kitchen gadgetry, I do firmly believe in multi-purposing my machines and gadgets.

Since I am pretty much obsessed with falafels, I decided to try my hand at some gluten free, vegan falafel waffles. May I just say, amazing? I love the way the creamy tahini sauce gets into the little nooks of the waffled falafel. And it makes for a savory waffle treat – more to my style than really sweet waffles.

A few attempts with my standard falafel mixture didn’t turn out exactly the way I planned, so I decided to start with a package of Kim’s Simple Meals Organic Waffle mix as a base and add the ingredients that make up a falafel. If I may say so myself – genius!

If you have a waffle maker – give these a try. If you don’t have a waffle maker, I suggest you get one, then give these a try!

Gluten Free Vegan Falafel Waffles Recipe

Ingredients

Falafel Waffles

1 (11.4-ounce) package Kim’s Simple Meals Organic Waffles
1 (15-ounce) can garbanzo beans, rinsed and drained
4 green onions, chopped
½ cup fresh Italian parsley leaves, roughly chopped
2 cloves garlic, minced
2 ½ cups water
¼ cup olive oil
2 teaspoons ground cumin
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon black pepper
Vegetable oil or gluten free nonstick cooking spray – for the waffle maker

Creamy Tahini

1 cup sesame tahini
¼ cup freshly squeezed lemon juice
1 garlic clove, minced
½ – ¾ teaspoon kosher salt
½ – ¾ cup water

Garnishes

Shredded lettuce
Grape tomatoes, halved
Pickled beets
Hot sauce, such as Sriracha
Parsley leaves

Directions

Falafel Waffles

In a blender or food processor, combine all the waffle ingredients and blend until very smooth. Let sit while the waffle maker heats up.

Oil the waffle maker and pour in about 2/3 cup of the falafel mixture (or use the amount your waffle maker suggests). Cook according to manufacturer’s directions.

If needed, keep waffles warm in a 200-degree oven.

Creamy Tahini

Place the tahini, lemon juice, garlic, ½ teaspoon salt, and ½ cup of water in a blender. Blend until smooth and thick; it should be the consistency of lightly whipped cream. Add a little more water if necessary. Taste and add more salt if needed. Transfer to a small serving bowl. Leftover tahini can be stored in a covered container in the refrigerator.

To Assemble

Spread each waffle with a layer of tahini. Top with garnishes of choice. Dollop with a little more tahini sauce and hot sauce, if desired.
