Almond Flour Bread with Goji Berries & Chocolate Chips


I love it when you can eat a treat that is actually good for you! This gluten-free quick bread recipe is packed with protein, thanks to almond flour and eggs, is gluten and dairy-free, and has some serious super-food quality thanks to goji berries.

Goji berries have been used for over 2,000 years as a medicinal food and supplement. Thanks to high levels of antioxidants, they help protect your eyes, combat inflammation, improve skin health, stabilize blood sugar, and have been shown to improve depression, anxiety, and sleep. That’s a lot of power in some little tasty berries!

I get mine from BareOrgaincs, they are organic, vegan, gluten-free, and non-GMO. I like the sweet-tart flavor and think they work so well in this bread recipe – a nice balance to the chocolate chips.

  • Preheat your oven to 325 degrees Grease a 9×5-inch loaf pan or line it with parchment paper.

  • In a large bowl, whisk together the almond flour, cornstarch, baking powder, and salt.

  • In a separate bowl, mix the eggs, maple syrup, melted coconut oil, vanilla extract, and almond milk until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the goji berries and vegan chocolate chips.

  • Pour the batter into the prepared loaf pan and spread it out evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  • Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
