Note about bananas
The best bananas to use in banana bread are ones that are very ripe. The more brown the skin is, the better. This is because bananas become sweeter as they ripen. So you’ll want to use the ripest bananas you can for the best results!
Oat flour banana bread step by step
In a large bowl, mash the bananas with a fork until no large chunks remain (step 1 above).
Add the eggs, honey and vanilla extract and mix until combined (step 2).
Add the oat flour, baking powder, xanthan gum and salt (step 3).
Use a large spoon to mix until fully incorporated, about 30 seconds (step 4).
Baking & serving
Line an 8″ x 4.5″ baking pan with parchment paper and spray with cooking spray.
Pour the batter into the pan and let it rest for 30 minutes before baking.
When the rest time is almost over, preheat the oven to 350F. Bake the loaf for 45 minutes or until a toothpick is inserted and comes out clean. Start checking at the 40-minute mark.
When the loaf tests done, remove the bread from the oven and place the pan on a wire rack to cool for 20 minutes. After 20 minutes, remove the bread from the pan to cool completely. When the bread is fully cooled, slice it and serve!
